I cook a lot of meals in a stock pot on simmer various cuts of cheap meat just melt in the mouth.
Bolocknese 4 hours is excellent.

I'm no fan of food, but fuck me does chicken come out of these fuckers delightfully tender and just falling apart at the touch.

Our slow cooker got me a little addicted to casseroles, coq au vin and the likes for a while.

Well only addicted as I wasn't fucking about with them for hours as the missus does it.

I am sure they are very good.

Re: Slow cooker
They aren't the best method of cooking or anything by any means. But if your whole household is out working/busy all day and still expects to be able to eat healthily in a tiny window of opportunity in the evening before everyone buggers off again, they can be very useful indeed.

Re: Slow cooker
Never used one, Cpugh.

And certainly not for Rendang! It needs uncovered cooking for the best part of a day, sometimes. It's supposed to be a dry curry. Totally worth it, though.

Re: Slow cooker
Chilli is good. The long cooking time is great for heat and flavour, and if you put one on in the morning all you have to do is remember to buy some tortillas and pots of coloured goo on your way home. If you're being all healthy, the long cooking time/flavour does wonders for soya/Quorn mince too. Handy thing to have if you've got friends coming over after work ahead of a gig or something and just want to arrive home and get some good food in you, rather than spend the first couple hours of the evening eating out.

Take it out and reduce it down in a pan although I didn't bother and it still tasted great.

Nurse R = Gordon Ramsay

Reduce the heat and simmer, uncovered, for 2-2½ hours, stirring occasionally, or until the meat starts to break up and most of the liquid has evaporated. Discard the cinnamon sticks before serving.

Re: Slow cooker
I think they're brilliant - I buy one at every place I've ever lived and inevitably some local bags it when I leave.

The concept tends to lose something in translation though - mate of mine has a bar in Bangkok and just before I left we were discussing the merits of them, so he bought one for his Thai wife to help reduce the demands in the bar kitchen.

"Load it up, plug it in and leave of eight hours," evidently means "Take the lid off and check it every 5 minutes" in Thai, so he had to ban her from using it...and that never worked, as soon as his back was turned she was in there rummaging around moaning about how long the thing took.

How can the rendang reduce sufficient liquid in a sealed pot?

TWe 11:51 Thu Feb 12
Re: Slow cooker
Use mine all the time. Cooked a beef rendang the the other week which was the nuts. Normally put it on in the morning then go to football or the pub then come home and get stuck in.

A slow cooker cooks slowly (the clue is in the name), a pressure cooker cooks quickly (a harder clue this time).

Can someone explain what a slow cooker can do that a pressure cooker can't?

Not too late to rescue this. Say the slow cooker was an impulse buy for the kitchen and buy her a good pair of earrings for Valentine's. Smart box for the earrings.

Re: Slow cooker
Steady

Outstanding work

Strongly recommend a beef and ale pie, food of the Gods

Cubed beef, veg and herbs with a couple of tins of Guiness or proper ale, topped off with stock of choice

Brew for hours, come back, strain off the solids, fire the liquid into a pan and reduce / thicken, add to solids in a dish, cover with shop bought puff pastry and 20 minutes alter you have a feast of joy
